By Eliana Marcum

The spotlight country of the week is commonly known as the land of a thousand hills, Rwanda! Many Oklahoma Christian University students are proud to call this beautiful country home and the university is honored to have ties to Rwanda for over 20 years. Rwanda is located in eastern-central Africa with four neighboring countries:  Burundi, Tanzania, Uganda, and the Democratic Republic of the Congo. This beautiful country is known for its lush forested hills, expansive tea plantations, and stunning waterfalls and lakes. Rwanda is a tropical paradise that values the importance and impact on nature; it preserves the exotic wildlife with national parks and exhibits. The conservation movements to promote a safe and stable environment as well as save endangered animals is an inspirational cause for many people.

As far as religious affiliation Rwanda is predominantly Christian with about 57% of the population Roman Catholic and 26% Protestant. Oklahoma Christian students get the chance to engage with a cross cultural faith that can broaden worldviews, open minds and change lives. This study opportunity gives students the chance to interact with people who will leave lasting impacts and create transformative relationships. Dadyne Mutuyimana, a senior and international student from Rwanda, said that her favorite thing about her country is how welcoming everyone is. This study abroad program is one that has recently been added to Oklahoma Christians program and is the next step in deepening ties to Rwanda. Fun Fact: Día De Los Muertos, Spanish for “Day of the Dead,” is a Mexican and partly Central and South American holiday celebrated to honor the lives of those who have died. Celebrated on November 1 to celebrate the lives of children, and November 2 to celebrate the lives of adults. Those who celebrate Día De Los Muertos sometimes believe the spirits of their loved ones can visit them in the forms of Monarch butterflies. Because of their migration pattern, the first monarchs arrive in Mexico for the winter on the days of Día De Los Muertos. Families also create temporary altars, or ofrendas, which offer water and food for their loved ones’ spirits to have when they visit.

Who doesn’t love a good road-trip snack like trail mix or mixed nuts? Some mixes have pumpkin seeds, some have more chocolate than peanuts, and some, let’s be honest, have way too many raisins. But beyond being tasty and convenient, nuts and seeds pack some serious nutrition. They’re full of healthy fats, plant-based protein, and fiber that support your heart, help you feel satisfied, and keep digestion moving. Their unsaturated fats can help lower LDL (“bad”) cholesterol when they replace saturated fats, and different varieties offer nutrients like magnesium, vitamin E, and calcium. Walnuts, chia seeds, and flaxseeds also provide plant-based omega-3s. To get the most out of this snack, choose unsalted varieties and stick to a small handful of nuts or a tablespoon or two of seeds. Sprinkle them over oatmeal, toss them into a salad, or enjoy them on their own, no road trip required.
